This is a crisp fresh salad popular throughout the eastern Mediterranean


Olive oil for drizzling
1 – 2 baby gem lettuces or iceberg lettuce
½ small onion diced
3 tomatoes, de-seeded and diced
8 radishes, sliced
I cucumber, de-seeded and sliced
A large bunch of flat-leaf parsley leaves, chopped
Small bunch of mint leaves, chopped
Small Pac choy, chopped
Any other salad ingredient that you like

You can also add baked pitta bread and chop into small pieces if you like.

For the dressing

4 tbsp olive oil
Juice of one lemon and grated rind
1 large garlic clove, grated
2 tsp sumac (you can find this in the spices at the supermarket)
1 – 2 tsp pomegranate molasses (you can find this in the spices also at the supermarket)
Sea salt and freshly ground pepper


  1. Put all the finely chopped salad ingredients into a large bowl and mix together
  2. Make the salad dressing in a jug and whisk until well combined
  3. Put this onto the salad just before serving so that it is fresh and does not make it soggy
  4. Mix together both salad and dressing and then serve and enjoy
