Fattoush Salad This is a crisp fresh salad popular throughout the eastern Mediterranean Ingredients Olive oil for drizzling1 – 2 baby gem lettuces or iceberg lettuce½ small onion diced3 tomatoes, de-seeded and diced8 radishes, slicedI cucumber, de-seeded and slicedA large bunch of flat-leaf parsley leaves, choppedSmall bunch of mint leaves, choppedSmall Pac choy, choppedAny other salad ingredient that you like You can also add baked pitta bread and chop into small pieces if you like. For the dressing 4 tbsp olive oilJuice of one lemon and grated rind1 large garlic clove, grated2 tsp sumac (you can find this in the spices at the supermarket)1 – 2 tsp pomegranate molasses (you can find this in the spices also at the supermarket)Sea salt and freshly ground pepper Preparation Put all the finely chopped salad ingredients into a large bowl and mix together Make the salad dressing in a jug and whisk until well combined Put this onto the salad just before serving so that it is fresh and does not make it soggy Mix together both salad and dressing and then serve and enjoy Manage Cookie Preferences
